    Ingredients

    • 4 cups salsa verde pork (recipe makes more than 4 cups)
    • 8-12 Corn or flour tortillas (I recommend corn)
    • 1 tablespoon olive oil
    • 3 bell peppers (thinly sliced (any mix of colors))
    • 1/2 red onion (thinly sliced)
    • 1 teaspoon chili powder
    • 1/2 tsp EACH ground cumin, smoked paprika, garlic powder
    • 1/4 teaspoon salt
    • 1/4 teaspoon chipotle chili powder (optional for heat)
    • 1/2 tablespoon lime juice
    • 1 cup sour cream (may sub Greek yogurt)
    • 3 tablespoons salsa verde
    • 1-2 tablespoons lime juice (to taste)
    • 2 teaspoons dry ranch seasoning mix
