By incorporating cheese into the dough, along with the tiny crunch of poppy seeds, these crackers become crisp snacks that keep your fingers reaching for another and then another and, well, you know how it goes.     Ingredients

    • 3/4 cup all-purpose flour
    • 1/4 cup yellow cornmeal
    • 1 tablespoon poppy seeds
    • 1/4 teaspoon salt
    • 1/4 teaspoon baking powder
    • 1/2 stick cold unsalted butter, cut into bits
    • 1 cup coarsely grated extra-sharp Cheddar (preferably orange)
    • 4 to 5 tablespoons cold water
    • 1 large egg
    • 1 tablespoon warm water
    • Coarse sea salt for sprinkling
    • Equipment: a 2 3/4-inch crescent cookie cutter
