    From breakfast to mid-afternoon snack to dessert, this tropical quick bread can be enjoyed all through the day. It is refreshingly light and full of coconut and pineapple flavor.  

    Ingredients

    • 1 1/4 cups all-purpose flour*
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 stick (1/2 cup) unsalted butter, room temperature
    • 4 oz cream cheese, room temperature
    • 2/3 cup Dixie Crystals Extra Fine Granulated Sugar
    • 2 large eggs
    • 1 tablespoon vanilla extract
    • 2 teaspoons coconut extract
    • 1 (8 oz) can crushed pineapple (do not drain)
    • 1 1/2 cups sweetened shredded coconut, divided
    • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.
