    • 1 Bell Pepper (Red, Orange, or Yellow)
    • 1 Whole Avocado (de-seeded and diced)
    • 1/4 Cup Red Onion (white is ok as well, red just tastes better)
    • 1/4 Cup Parmesan Cheese - (shredded)
    • Green Onion (enough to lightly garnish)
    • 1/4 cup Olive Oil
    • 3 tsps Apple Cider Vinegar
