    • 3 tablespoons olive oil, plus extra for drizzling
    • 2 yellow onions, thinly sliced
    • 1 teaspoon turmeric, ground
    • 1 teaspoon cumin, ground
    • 1 poblano chili, diced
    • 3 cloves garlic, minced
    • 1/2 cup green or brown lentils, rinsed
    • 1 1/2 teaspoons salt
    • 8 to 10 cups vegetable broth (low sodium if possible)
    • 5 cups fresh spinach, washed and chopped
    • 1/2 pound linguine, broken in half
    • 1 cup parsley, chopped
    • 1/2 cup cilantro, chopped (more to taste)
    • 1/3 cup chopped fresh dill (more to taste)
