    These healthy chia pudding parfaits are made with creamy coconut-vanilla chia pudding, juicy roasted peaches and crispy cinnamon-spiced granola. All the flavors of a summery peach crisp, in a cute and secretly healthy parfait!

    Ingredients

    • 1 cup Silk Unsweetened Coconutmilk
    • 1/4 cup chia seeds
    • 2 tbsp. maple syrup
    • 1 tbsp. almond butter (optional, you could also substitute natural peanut butter or cashew butter)
    • 1 tsp. vanilla extract
    • pinch cardamom (optional, but so nice!)
    • pinch salt
    • 1 1/2 cups rolled oats (gluten-free if needed)
    • 1/2 cup chopped pecans
    • 2 tbsp. chia seeds
    • 1 1/2 tsp. ground cinnamon
    • generous pinch salt
    • 2 tbsp. almond butter (can substitute natural peanut butter or cashew butter)
    • 2 tbsp. coconut oil (or your favorite baking oil)
    • 4 cups diced peaches (about 4 medium peaches)
    • 1-2 tbsp. maple syrup (to taste)
    • 1 tsp. ground cinnamon
