    About half way into making this pasta dish, I realized I had run out of parmesan cheese. So I used a small (113 gram) package of goat cheese instead, with deliciously creamy results.

    Ingredients

    • 3 cups (about 24 ounces) chopped butternut squash (or 1 large squash that has been peeled, seeded, and chopped)
    • ½ onion, chopped [note: I sliced into very thin half moons instead]
    • Leaves from 4 or 5 fresh thyme sprigs
    • 3 tablespoons olive oil
    • salt and pepper to taste
    • 2 teaspoons smoked paprika
    • 1 pound any pasta [note: I used brown rice penne]
    • ½ cup freshly grated Parmesan, plus more for serving [note: I used a small log of goat cheese]
    • Fresh ricotta (optional), for serving
