    This pie dough uses half butter and half lard. The result is an easy to work with and versatile dough. It makes one double crust pie.

    Ingredients

    • 5 thin slices pancetta
    • 1 tbsp olive oil
    • 1 large shallot (or 2 small)
    • 1/2 cup sharp cheddar cheese, grated
    • 6 eggs
    • 1 1/2 cup whole milk
    • pinch of pepper
    • 2 tsp fresh thyme (or 1/2 tsp dried thyme)
    • 70 g (2.5 oz) goat's cheese
    • 21/4 cup all purpose flour
    • 1/2 cup cold lard, cubed
    • 1/2 cup cold butter, cubed
    • 1/2 tsp salt
    • 1 egg, lightly beaten
    • 1 tbsp white vinegar
    • 2 tbsp cold water
