Chicken and fish are my favorite proteins. The versatility of chicken allows me to create easy Paleo meals quickly and on the fly. It’s also such an easy protein to prepare and generally agreeable to the entire family. There are so many ways to prepare chicken, but one of the quick and easy Paleo dinner recipes that I enjoy is this tasty roasted chicken with lemon and sage. This is a simple Paleo meal that only requires approximately 15 minutes of prep time and a mere 30 minutes of cook time. This should be one of your go to Paleo dinner recipes when you arrive home from a long day and realize that you did not plan a meal for the evening. Due to the short prep and cook times, you’ll find that you can generally muster up the energy (even after a long day) to pull this together and frankly, you’ll be glad that you spent that extra few minutes of effort to prepare this delicious and easy Paleo dinner recipe.Part of the beauty of preparing this is the flexibility to pair it with any of your favorite side dishes. My go to side item is steamed vegetables (spinach and broccoli are my favorites), which take no time to season and steam. If I’m feeling particularly ravenous, I will also do a baked sweet potato topped with ghee, pecan pieces and fresh cinnamon or some delicious mashed sweet potatoes topped similarly. The possibilities are endless. As always, your creativity will guide you as you put together a complete meal. Here’s the recipe:

    • 1 1/2 lbs skin on, bone in chicken breast
    • 1 lemon sliced
    • 1 bunch fresh sage, coarsely chopped
    • 2 tbsp of ghee or unsalted butter
