Ingredients
- 4 Tbsp avocado oil (or your preferred oil)
- 2 Tbsp chili powder
- 1 Tbsp ground cumin
- 2 to 3 cloves garlic, chopped
- 2 fresh bay leaves
- 1 large onion, chopped
- Handful fresh cilantro leaves, roughly chopped
- Freshly ground black pepper
- 1 quart chicken stock (homemade if possible)
- 14-ounce can diced tomatoes with green chiles (you can substitute a 14 oz can of diced tomatoes and a 4-ounce can chopped green chiles)
- 4 pieces boneless, skinless chicken breasts (or for an economical option use chicken stir fry cuts)
- Garnish: avocado, limes, fresh cilantro, Jalapeño peppers, red onion, Queso fresco or mexi cheese blend, sour cream, pico de gallo or salsa.
