Stir well until soda is dissolved. Set aside.Step 2Boil belly pork in salted water for 8-10 minutes. Set aside and chill for 1 hour.Step 3Using a fork,prick the skin all over and evenly. Brush a couple of layers of the soda mixture over. After 5 minutes,rub 2 tablespoons of salt on the skin and 3 tablespoons around the meat. Rub black pepper and five spice over belly pork only.Step 4Preheat your oven to 500 F (250 C). Arrange seasoned belly pork in- leave both top and bottom heat elements on. Cook for 20 minutes, then reduce heat to 360 F (180 C) and cook for a further 25 minutes.Step 5Remove belly pork from the oven ,during the cooking ,every 15 minutes for two times. Prick the skin to aerate then replace into oven. Temperature inside should be 300 F (150 C) before it is done.Step 6Remove oven cooked belly pork from the oven and let it cool. Slice and serve.
