One-pan baked chicken with chorizo and tomatoes

    The simplest of baked chicken meals, but also one of the tastiest. Just pile tomatoes, chorizo, garlic, basil and olive oil into a baking dish and bake until browned and bubbling. Delicious!

    Ingredients

    • 750 grams (about 1.5 pounds) boneless, skinless chicken thighs
    • 1 bulb of garlic, split into cloves but unpeeled
    • salt and pepper
    • 1 ‘ring’ of chorizo (about 225 grams / 8 ounces), skinned and chopped or torn into smallish chunks
    • 1 big bunch of fresh basil, chopped or torn
    • 1.25 kilos / 2.75 pounds tomatoes (I use cherry tomatoes for ease, but any small tomatoes or chopped larger ones will work)
    • a drizzle of olive oil (about a tablespoon)
    • a drizzle of balsamic vinegar (about a tablespoon) – optional
    • toasted bread with olive oil and salt, or mashed potatoes (to serve)
