    The original recipe for this salad includes a fantastic Bell Pepper Garnish that puts this salad over the top flavor-wise; however since the garnish adds 2 carbs to each serving, we’ll forgo it in Phase 1. This recipe makes enough for two or leftovers for the next day. If you use a salad dressing that has more than zero carbs or sour cream in place of the mayo be sure to adjust the carb count. As you prepare each of the ingredients below place them in a medium serving bowl.

    Ingredients

    • 4 hard-boiled eggs, chopped
    • 4 link sausages, cooked and sliced (can substitute sausage patties)
    • 1 cup chopped celery
    • ¼ cup chopped dill pickle
    • ¼ cup chopped green onion both white & green portions
    • ½ cup chopped zucchini
