Mushrooms and Pearl Barley

    Ingredients

    2 cups Pearl Barley

    4 cups low sodium Chicken Stock

    1 cup Button mushrooms, diced.

    1 Tbsp. Olive oil

    TT Salt

    TT Pepper

    Optional: Parmesan Cheese and parsley to garnish

    Instructions

    1. Place barley, stock and oil in rice cooker and let cook.
    2. When almost finished add mushrooms.
    3. Season to taste.
