    A delicious blend of in season summer vegetables, garam masala, and a coconut broth. Simple, easy, and so healthy.

    Ingredients

    • 1 tablespoon of vegetable oil or 1/4 cup or vegetable broth
    • 1 red onion – diced
    • 2 medium carrots – peeled and cut into 1/4 inch coins
    • 1 bell pepper (yellow, red, or orange) – seeded and dice
    • 2 medium zucchini - diced
    • 1 yellow summer squash – diced
    • 1 tablespoon of minced ginger
    • 1 clove of garlic – minced
    • 4 cups of vegetable broth - add 3 cups if you prefer a strong coconut taste
    • 1 can of lite coconut milk
    • 1 tablespoon of garam masala - taste the broth and add more if desired
    • 1 teaspoon of ground sea salt
    • 2 medium tomatoes – diced
    • 1 box of couscous
    • 1/4 cup of cilantro – finely chopped
