Ingredients

- 1 red onion – diced
- 2 medium carrots – peeled and cut into 1/4 inch coins
- 1 bell pepper (yellow, red, or orange) – seeded and dice
- 2 medium zucchini - diced
- 1 yellow summer squash – diced
- 1 tablespoon of minced ginger
- 1 clove of garlic – minced
- 4 cups of vegetable broth - add 3 cups if you prefer a strong coconut taste
- 1 can of lite coconut milk
- 1 tablespoon of garam masala - taste the broth and add more if desired
- 1 teaspoon of ground sea salt
- 2 medium tomatoes – diced
- 1 box of couscous
- 1/4 cup of cilantro – finely chopped
