    These little cheesecakes certainly pack a punch and you can easily have more than one. The strawberry topping with some syrup that formed when you macerate the strawberries, are over the top and makes this dessert INSANELY good!

    Ingredients

    • 1 whole sleeve of original graham crackers
    • 1/2 stick of butter, melted
    • 12 oz cream cheese, softened (1-1/2 bars)
    • 1/2 cup powdered sugar
    • 1 TBSP lemon juice
    • 1 teaspoon almond extract
    • 2 eggs
    • 1 lb of Strawberries (fresh is best), hulled and diced into small cubes
    • 1/2 cup of granulated sugar
