- 1 cup corn, (from a can, thawed if frozen, or cut from the cob)
- 1/2 cup halved grape tomatoes
- 1/4 cup minced red onion
- minced cilantro for garnish, (if desired)
- 1 cup plain Greek yogurt
- 3 Tbsp salsa
- 3 Tbsp olive oil
- 3 Tbsp apple cider vinegar
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp chili powder
- 1/4 tsp cumin
- 1/8 tsp black pepper
- 2 Tbsp minced fresh cilantro
