    Inspired by arroz verde, this healthy quinoa side dish is cooked in a similar way as traditional rice and is filled with lots of green veggies.

    Ingredients

    • 3 Heaping Cups Spinach
    • 2 Poblano Peppers, seeds and veins removed
    • 2 Garlic Cloves
    • 1 Cup Chopped Cilantro
    • ½ Tsp Salt, or to taste
    • 1½ Cups Water, plus more to total 4 cups
    • 1½ Tablespoons Olive Oil
    • ½ Large White Onion, diced small
    • 2 Cups Quinoa, rinsed and drained
    • ½ Lime Juiced, optional
    • 1 Cup Corn, optional
