    Barley is one of the oldest cultivated grains and, yes, it does contain gluten. But the fiber in barley is particularly healthy, and may help lower cholesterol even more efficiently than the fiber found in oats! This whole grain cooks just like rice - combine it with water or stock in a 3:1 ratio and cook on your stove top.


    • 1/2 cup barley or barley spelt mixture
    • 1 1/2 cups water
    • Pinch of salt
    • 2 cooked skinless, boneless chicken breasts, shredded
    • 3 mini cucumbers, diced
    • 2 tomatoes, seeded and diced
    • 5 sundried tomatoes, rehydrated and finely minced
    • 3 tablespoons reduced fat feta cheese, crumbled
    • 1/2 teaspoon sumac
    • 1 tablespoon lemon zest
    • Juice of 1/2 lemon
    • 2 tablespoons olive oil
    • 1/2 teaspoon red pepper flakes
    • 3 tablespoons sunflower seeds
    • 2 tablespoons mint, chiffonade
    • Salt to taste
