    This is an all time favorite sweet potato recipe at my house. Smokey, sweet, slightly crisp. It wins on all counts. Eat it solo or add it to just about any grain dish for dense nutrition and tons of flavor!

    Ingredients

    • about 2 lbs sweet potatoes (I used 2 medium sized sweet potatoes), peeled & sliced into ¼"-1/2" thick rounds
    • 2 tablespoons olive oil
    • 1 teaspoon Celtic sea salt
    • 1 tablespoon smoked paprika
    • 2 teaspoons maple syrup
