    I love soup because: 1) It’s easy to make. 2) It’s a healthy comfort food that warms you up on a cold day. 3) If you make a big pot for lunch or dinner, you don’t have to cook as much the next day or two (hooray for leftovers!).     Ingredients

    • 1 tablespoon extra-virgin olive oil
    • 1 cup chopped zucchini
    • 1 cup fresh or frozen sweet peas
    • 1/2 cup chopped carrots
    • 1/2 cup chopped celery
    • 1/2 cup chopped onion
    • 2 cloves garlic, minced
    • 6 cups water
    • 1 (14.5-ounce) can diced tomatoes, undrained
    • 1 cup dry lentils, rinsed and sorted
    • 1 teaspoon salt
    • 1/2 teaspoon dried thyme
    • 1/8 teaspoon pepper
    • Chopped fresh parsley, to taste
