    This LEMON POPPYSEED DRESSING is perfect for spring & summer salads. It's naturally sweetened with honey and uses less oil, for a flavor I find addictive!

    Ingredients

    • 1/2 cup freshly squeezed lemon juice
    • 1/2 cup extra-virgin olive oil
    • 1/4 cup honey ((or maple syrup for vegans))
    • 2 teaspoons spicy brown mustard
    • 1/2 teaspoon fine sea salt
    • 1/4 cup diced red onion ((about 2 slices))
    • 1 tablespoon poppy seeds
