    This lovely pie is one of the best we've ever eaten. A luscious lemon filling is topped with a wonderful meringue and baked to perfection.

    Ingredients

    • 4 tbsp. cornstarch
    • 4 tbsp. Gold Medal UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
    • 1/2 tsp. salt
    • 1 1/2 cups sugar
    • 1 1/2 cups boiling water
    • 1 tbsp. Land ‘O Lakes unsalted butter
    • Few gratings lemon rind
    • 1/3 cup lemon juice
    • 4 large egg yolks (slightly beaten)
    • Baked pie shell
    • 4 large egg whites
    • 1/2 cup sugar
    • 2 tsp. lemon juice
    • 1/2 tsp. vanilla
    • dash salt
