Lemon Garlic Zucchini Noodles

    In a small pan on low heat, add garlic and oil. Cook until garlic is lightly browned. Squeeze and mix in juice and parsley. Add salt as needed. In a large pan on medium-high heat, add zucchini noodles and cook until just tender, stirring as needed. Add in sauce and toss until noodles are evenly coated. Squeeze additional lemon if desired.

    • 2 cloves garlic (minced)
    • 2 tbsp olive oil
    • 1/2 lemon, juiced
    • 1 tsp chopped parsley (or combination of parsley and fresh oregano)
