    • 1 and 1/4 cups cashews  , raw
    • 1/2 cup desiccated coconut  *
    • 1/2 cup protein powder  , either neutral or vanilla flavoured**
    • 2 tbsp chia seeds 
    • 1  lemon 
    • 1/2 tsp salt  - I like pink Himalayan salt in these
    • 2 tsp vanilla extract  (optional)
