    • 2 tbsp unsalted butter, melted and semi-cooled
    • 3 tbsp vegetable oil
    • ? c sugar
    • 1 egg
    • 1 tsp vanilla extract
    • 3 tsp grated lemon zest (add or reduce based on your preferences)
    • ½ c milk (I used skim)
    • 1? c Bob’s Red Mill All Purpose Flour
    • ¾ tsp baking powder
    • ¼ tsp salt
    • ½ c fresh blueberries
    • Glaze:
    • 1 c powdered icing sugar
    • 2 tsp lemon zest
    • 2-4 tbsp fresh lemon juice (add 1 tbsp at a time until you reach desired consistency)
