  • Ingredients

    • 6 Tbsp unsalted butter
    • 3 carrots, chopped
    • 2 stalks celery, chopped
    • 1 large onion, diced
    • 8 oz mushrooms, sliced
    • 3 cloves garlic, minced
    • 6 Tbsp all purpose flour
    • 3 cups chicken or turkey broth (or more depending on how liquid-y you want it)
    • 1/2 Tbsp fresh rosemary (or 1/2 tsp dried)
    • 1/4 cup minced fresh parsley (or 1 Tbsp dried)
    • 1/4 tsp ground nutmeg
    • 1/4 tsp white pepper
    • 2 cups chopped or shredded leftover cooked turkey
    • 8 oz egg noodles, cooked 1 minute less than al dente
    • salt to taste (I add the salt after I get everything mixed up so I can taste test)
    • freshly grated cheese (we use extra sharp cheddar and Monterey jack)
