    • 1 tbsp za'atar (or other Middle Eastern seasoning)
    • 1/2 cucumber, thinly sliced
    • 1/2 pint small ripe tomatoes, halved or quartered
    • 1/2 large bell pepper
    • 1/4 red onion, thinly sliced
    • 1/4 cup chopped fresh cilantro and mint leaves (either one is optional)
    • 1 lemon
    • drizzle of olive oil
    • salt and pepper to season
    • 1/2 cup thick plain Greek yogurt
    • 1 tbsp sumac
