    Korean egg roll or gyeranmari are a common Korean side dish and are often packed in school lunch boxes. Korean egg rolls are similar to a rolled omelet and are traditionally filled with carrot, onion, and green onion. They are made just like an omelet, except the egg mixture is added in stages, then rolled up several times and sliced into bite sized pieces. I know how to make an omelet so this seemed like a good place to start.

    Ingredients

    • 5 large eggs
    • 1/4 teaspoon kosher salt
    • 1/4 teaspoon black pepper
    • 1 tablespoon whole milk
    • 1/4 teaspoon white vinegar
    • 1/4 cup carrot (about 1 small carrot), finely chopped
    • 1/4 cup yellow onion (about 1/4 small onion), finely chopped
    • 1/4 cup green onion (about 1 green onion), finely chopped
    • 1/4 cup shitake mushrooms (about 4-5 mushrooms), finely sliced
    • 1/4 cup asparagus (about 1 large stalk asparagus), finely sliced on bias
    • virgin coconut oil
