    • 4 oz spinach
    • 1 1/2 tablespoons oil
    • 2 cloves garlic, minced
    • 1/2 small onion, thinly sliced
    • 3-4 dried shiitake mushrooms, soaked in warm water, stem removed and sliced
    • 1 small carrot, cut into thin strips
    • 1 stalk scallion, cut into 1-inch lengths
    • 1/2 tablespoon sesame oil
    • Salt to taste
    • 1 heaping teaspoon toasted white sesame
    • 4 tablespoons soy sauce
    • 2 1/2 tablespoons sugar
