Ingredients
- 1 1/2 cups oatmeal
- 3/4 cup oat flour (grind oats in a blender or food processor to form a flour)
- 2 tablespoons arrowroot powder
- 1/3 cup shredded coconut, unsweetened
- 3/4 teaspoon cinnamon
- 1/2 teaspoon baking powder (not baking soda)
- 1/4 teaspoon sea salt
- 1/2 cup coconut oil
- 3 tablespoons coconut sugar
- 3 tablespoons honey
- 2 tablespoons flax seed, ground
- 1 egg
- 1 teaspoon vanilla
- 1/4 cup raisins (I used golden)
- 1/4 cup dried cranberries
- 3 tablespoons choppped 85% dark chocolate or mini dark chocolate chips
- 2 tablespoons pumpkin seeds
- 2 tablespoons sunflower seeds
- 2 tablespoons hemp seeds
- 1 tablespoon sesame seeds
- 1 tablespoon cocoa nibs
