    I've been making salted caramels for about ten years and I think this is the easiest and most reliable recipe around. They're salty (but in the best possible way) and keep for a week in the fridge (in the unlikely event you haven't eaten them all by then).

    Ingredients

    • Vegetable oil
    • 1½ C. Sugar
    • ¼ C. light corn syrup
    • 1 C. heavy cream
    • 5 Tbs. unsalted butter
    • 1 tsp. fine fleur de sel, plus extra for sprinkling
    • ½ tsp. pure vanilla extract
