    • 1 cup butter
    • 1 cup dark brown sugar (I used Muscovado)
    • 1?2 cup granulated sugar
    • 1 egg
    • 1 egg yolk
    • 1 teaspoon pure vanilla extract
    • 2 cups flour
    • 1 cup uncooked rolled oats
    • 1?2 teaspoon baking soda
    • 1?2 teaspoon salt
    • 1?4 teaspoon ground cinnamon
    • 1 cup white chocolate chips
    • 1 cup chocolate chips
    • Melt the butter over medium heat in a large saucepan. Remove from the heat, add both sugars and stir until smooth. Chill the mixture for about 10 minutes in the refrigerator.
    • Stir in egg, egg yolk and vanilla.
    • Add flour, rolled oats, baking soda, salt and cinnamon and mix together.
    • Stir in both white and dark chocolate chips.
    • Use a scoop to make 24 equal size portions, then roll the dough by hand into balls. Place on a cookie sheet and chill for at least 30 minutes.
    • Bake the cookies in preheated 325 F (160 C) oven for 12 to 14 minutes.
