    Prefer this with spinach, bacon, hard boiled egg, and whatever else inspiration salad.

    Ingredients

    • 1 pound of bacon
    • 1 onion chopped
    • 1 tablespoon garlic minced
    • 2 eggs, well beaten
    • 1/3 cup vinegar
    • 3 tablespoons brown sugar
    • 1 tablespoon of dijon mustard
    • salt pepper and garlic powder to taste
    • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving drippings, crumble and set aside. Saute onions until soft add garlic, cook till fragrant. In a medium bowl beat together the eggs, vinegar, brown sugar and mustard. Cook in the bacon drippings over low heat, stirring constantly. Season as needed.
