    • Olive oil
    • 1 Small Onion (Finely Chopped)
    • 2 Medium Carrots (Grated)
    • 1 Bay Leaf
    • 1l Vegetable Stock
    • 6 Rashers of Bacon (Chopped into small chunks and fried)
    • 10 Charlotte Potatoes (Boiled until soft)
    • Pepper (I do not add salt due to the bacon being quite salty)
