    • 1 (14-pound) turkey, giblets and wings (second joint and tip only) removed and reserved for Chris Hastings's Turkey Stock
    • 4 teaspoons coarse salt
    • 4 teaspoons freshly ground black pepper
    • Oyster Dressing
    • 3 tablespoons olive oil
    • 3 large onions, cut into 2-inch-thick slices
    • 6 sprigs fresh thyme
    • 3 sprigs fresh sage
