    These Healthy Vegetarian Nachos with Rainbow Vegetables are the best healthier way to enjoy nachos! They're low in fat and packed with healthy veggies!

    Ingredients

    • 8 cups baked or low fat tortilla chips
    • 1 1/2 cups cherry tomatoes, halved
    • 1/2 cup canned corn, rinsed and drained
    • 1/2 cup canned black beans, rinsed and drained
    • 1 small red onion, diced or sliced
    • 1 green bell pepper, diced
    • 1 1/2 cups mixed shredded low fat cheese (I use a combination of mozzarella and cheddar)
    • sour cream, salsa, and fresh cilantro for serving
