    The taste was great but this recipe will only yield 6 small waffles. The batter is thick, which is to be expected, but it took a bit longer to cook.

    Ingredients

    • 1 sweet potato Medium, ~11/2 chopped or 380 g, pre-cooked*
    • 1 cup old-fashioned rolled oats
    • 1 tablespoon baking powder
    • 1 teaspoon cinnamon
    • 1 egg Vegan, 1 T. ground flax seed + 3 T. warm water. Let sit for 3 minutes
    • 3/4 cup unsweetened vanilla almond milk or milk of choice
    • 1 tablespoon extra virgin coconut oil or oil of choice
    • 1 tablespoon vanilla extract
    • 1/4 cup blueberries
    • 1 tablespoon peanut butter or Almond Butter
    • 1 teaspoon maple syrup or Honey
