    This delicious traditional chicken salad recipe gets an added boost of protein from cottage cheese.

    Ingredients

    • 2 cups chicken, chopped
    • 1/2 cup dill pickle, chopped
    • 3-4 tablespoons pickle juice (I add it a tablespoon at a time and test it as I' go along to make sure I get the right taste and consistency)
    • 1/4 cup + 2 tablespoons celery, chopped
    • 1/2 cup Hood Cottage Cheese with Chive
    • 1 tablespoon parsley, chopped
    • 1 tablespoon chives, chopped
    • 2 tablespoons mayonnaise
    • Salt and pepper to taste
    • Optional for sandwiches: sliced cheese, lettuce, tomato, avocado slices
