    Amazing Polynesian style chicken main dish with peppers, pineapple and water chestnuts in a tasty soy sauce. Serve with hot, cooked rice.

    Ingredients

    • 4 chicken breasts (boneless, skinless)
    • 1 cup cornstarch (more or less to adequately dredge the chicken pieces)
    • 3-4 tbsp. soy sauce
    • 3 tbsp. oil
    • 1/2 tsp. salt
    • 4 tbsp. chicken stock or 1 chicken bouillon cube (I used 2 tsp. chicken bouillon)
    • 1 green pepper (cut in squares or strips)
    • 16 oz. can pineapple chunks in syrup
    • 1 medium onion (cut in thin strips)
    • 1 can sliced water chestnuts (drained)
    • 2 heaping tablespoons brown sugar
