Grilled Vegan Dirty Rice Stuffed Peppers

    Spicy brown rice and vegetables mixed up and stuffed into bell peppers, then grilled to perfection.

    Ingredients

    • 1 cup of brown basmati rice
    • 1 1/2 cups of vegetable broth (you can use water but it won’t be as flavorful)
    • Pinch of sea salt
    • 15 ounce can of black beans – drained and rinsed well
    • 2 tablespoons of ground chili powder
    • 2 teaspoons of cumin
    • 1 teaspoon of chipotle chili powder
    • 1 teaspoon of ground sea salt (more if you feel it needs it)
    • Ground black pepper to taste
    • 3 large bell peppers cut in half and seeds removed.
    • 2 ears of corn
    • 1 to 2 jalapeno peppers
    • 3 large green onions (trim the ends of the greens but leave the greens attached to the bulb of the onion) or one large white onion
    • 1/2 cup of cilantro leaves - chopped
    • 2 tablespoons of olive oil
    • Vegan cheese (optional)
