    Who needs an excuse to fire up the grill? These lettuce wraps are a crowd pleaser for sure. They are quick, healthy and sooo satisfying. They are also, gluten free, vegan, no oil, & low sodium.

    Ingredients

    • 20-25 romaine leaves (2 heads)
    • 1 large zucchini, grilled and chopped
    • 1 large yellow squash, grilled and chopped
    • 1 large red bell pepper, grilled and chopped
    • 1 red onion, grilled and chopped
    • 2 avocados, diced
    • 1/4 head red cabbage, chopped
    • 2 ears of corn, grilled, stripped from cob
    • 4 tablespoons red onion, finely diced
    • 1 large tomato, diced
    • 1/4 cup cilantro, chopped
    • 2 teaspoon red pepper, minced
    • 1 1/2 cups black beans, rinsed
    • 2/3 cup water
    • 2 tablespoons onion, diced
    • 1 garlic cloves, minced
    • 1 1/4 teaspoon salt
    • Fresh ground black pepper
    • 1 cups cashews
    • 1/2 cup water
    • 1 teaspoon lemon juice
    • 1 teaspoon salt
    • 1/2 teaspoon chipotle powder
