    Ingredients

    • 2 pounds green beans, ends trimmed and cut in half
    • Roasted Mushrooms
    • 8 oz shitake mushrooms, stemmed and caps sliced
    • 8 oz oyster mushrooms, large, central stem removed and cut into smaller pieces
    • 8 oz cremini mushrooms, sliced
    • 2-3 Tbsp extra virgin olive oil
    • 8-10 thyme sprigs
    • Salt and pepper
    • Bechamel Sauce
    • 1 stick butter (4 oz)
    • 1 garlic clove, minced
    • 1 large shallot, minced
    • ? cup all purpose flour
    • 3 cups whole milk
    • ½ tsp freshly grated nutmeg
    • 2 tsp soy sauce
    • 1 tsp lemon zest
    • 2 Tbsp lemon juice
    • ¾ cup grated Parmesan cheese
    • Crispy Shallots
    • 2 cups canola oil
    • 4 large shallots, thinly sliced and separated into rings
    • 2-3 Tbsp Wondra flour
