    • 2 Tbsp olive oil (extra virgin)
    • a few sprigs fresh thyme
    • 1 cup vegetable broth
    • 1 cup cashews (raw)
    • 1 tsp sea salt
    • 1/2 tsp black pepper (optional)
    • 3-4 Tbsp vegan Parmesan (follow your heart shreds)
    • 1/2 cup crispy onions
