    Ingredients

    • 2¼ cup granulated sugar
    • zest of 1 grapefruit
    • 4 eggs
    • 1½ cups Greek yogurt (I used 0%)
    • 1 cup olive oil
    • 1 teaspoon vanilla extract
    • 3 cups all-purpose flour
    • 1 tablespoon + 2 teaspoons baking powder
    • 1 teaspoon kosher salt
    • segments of 1 whole grapefruit, chopped
    • 1-2 tablespoons of butter, for greasing the muffin tins
