    Ingredients

    • 2 eggs (separated)
    • 1 tbsp lemon zest
    • 1/4 cup granulated sugar, (divided)
    • 3/4 cup finely ground almond flour
    • 1/2 tsp baking powder
    • 1/4 tsp cream of tartar
    • pinch of salt
    • 1 1/2 cups ricotta cheese
    • 2 tbsp maple syrup or honey or sugar
    • 2 cups fresh berries (raspberries (strawberries, blueberries or a mixture))
    • 1 tbsp honey, (for drizzling on berries)
