    Ingredients

    • 2 lbs. carrots (peeled and diced in very fine pieces, or use matchstix carrots)
    • 3/4 cup sugar
    • 1 1/2 tsp. baking powder
    • 1 1/2 tsp. vanilla
    • 1/2 tsp. cinnamon
    • 2 heaping tablespoonfuls all purpose gluten free flour (or Pamela's GF baking and pancake mix)
    • 3 large eggs (beaten)
    • 1/2 cup unsalted butter (softened)
    • 2 tbsp. confectioners’ sugar
