    Ingredients

    • 2 cups (250g) all-purpose flour (accurately measured)
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground cinnamon
    • 1 large egg, at room temperature*
    • 3/4 cup (150g) granulated sugar
    • 1/4 cup (50g) packed light or dark brown sugar
    • 1 cup (240ml) buttermilk (no substitutions)
    • 1/3 cup (80ml) vegetable oil (or canola; or melted coconut oil)
    • 2 teaspoons vanilla extract
    • 1 and 1/2 cups fresh strawberries, rinsed, dried, chopped, and tossed in 1 Tablespoon of flour
    • 1 cup (120g) confectioners' sugar
    • 1/2 teaspoon vanilla extract
    • 2 Tablespoons (30ml) heavy cream or milk
