    This jam will keep for 2 -3 weeks in the fridge, but I doubt it will last that long. Enjoy it on toast, pancakes, bagels and English muffins and even peanut butter sandwiches. HOWEVER, don't lose track of the fact that it is a key ingredient in my Strawberry Rhubarb Hand Pies and my Strawberry Rhubarb Ripple Ice Cream. It's so much more than jam!

    Ingredients

    • 6 cups thinly sliced rhubarb (1/4" to ½" slices)
    • 4 cups thinly sliced, fresh strawberries
    • 1 cup sugar
    • ½ teaspoon powdered ginger
    • ½ teaspoon nutmeg
    • ½ lemon, juice and zest
