    • 2 large eggs, lightly beaten
    • 1 large clove garlic, grated on a microplane or crushed using a mortar and pestle
    • ¼ teaspoon salt
    • ? teaspoon black pepper
    • Oil, for shallow frying
    • 1 (16 oz) can no-salt-added black beans, rinsed and drained
    • 1 medium red onion, finely chopped
    • 1 mango, peeled and diced
    • 4 tablespoons chopped fresh parsley
    • 2 tablespoons mango vinegar
    • 2 tablespoons extra virgin olive oil
    • ¼ teaspoon sea salt, plus more to taste
